Sometimes when we really want to pamper ourselves with homemade South Indian lunch then its mostly the above menu that brings flavourful change to our taste buds giving it a punch of tamarind, jaggery and coconut. As coconut is easily available it takes hardly any efforts to prepare this coconut flavoured meal.

Note: we could also make coconut milk at home. Take 1 cup of grated unsweetened coconut and put it 1 ½ cups of hot water. Let it cool and then blend it several times. Take a clean muslin cloth and squeeze through this creamy thick mixture to get the coconut milk out of it.

Ingredients

  • Par boiled Vegetables( carrots, cauliflower, potato, beans, paneer (optional), whole green chilli cut into wedges 1 cup
  • Coconut milk 1 ½ cup
  • Sliced onions 1 medium
  • Grated ginger 1 tsp
  • Whole red chilli 1
  • Cloves 2-4
  • Cinnamon 1
  • Peppercorn ¼ tsp
  • Bay leaf 1
  • Green cardamom 2
  • Oil 2 tbsp
  • Salt to taste

Method

Step 1

Heat oil in a pan and put the whole spices to sputter. The put in the sliced onions and sauté till soft and translucent.

Step 2

Put in the mixed vegetables and stir fry them. Now cover it with a lid for it to get fully cooked. Also put in the grated ginger and salt.

Step 3

Once cooked put in the coconut milk and boil for around 5-10mins. See to it that it doesn’t curdle.
